Poachy Keen!

Now I know what you're thinking, "Isn't poaching illegal?"

Yes, wait, no! Not the kind of poaching we're talking about!

Poached eggs are a classic, but there's a huge misconception that they are too difficult to make at home or absolutely unattainable. This is not true. I confess, I was nervous to poach an egg! Of course I had had poached eggs at various restaurants, but I never thought that I could poach an egg. I knew nothing whatsoever about the process.

Fortunately, my best friend and fellow egg-lover, Mad, convinced me that poaching was the ONLY way to enjoy an egg. And so we walked through the process. I could describe to you step by step the process of poaching an egg, but I think I will pass along to you the same video that we worked from!

Here's the most important thing to know DON'T BE SCARED OF POACHING!

Poached eggs are even better when they are served on top of some other food. The delicate skin and cook on them means that the yoke runs over and enhances the flavor of other foods.

In this case, I chose to sauté a simple sweet potato and kale mixture to enhance the poached egg. Much like this recipe:

Voila! Poached eggs made easy!
