Maybe I'm just a bit eggcentric, but I really enjoy the experience of living off campus and getting to cook for myself. First of all, in many cases it saves money, and second of all, it's great life eggsperience. If I'm honest though, there's days when I miss how easy life is on a meal plan. That, and I miss Einstein's Breakfast Sandwiches. I was thinking about them yesterday and decided that my Saturday morning challenge would be to duplicate one as best I could with the ingredients I had on hand!


I had to be a little bit creative scrounging for ingredients. I ended up trading my roommate 2 eggs for a bagel (eggs are also useful in bartering!) and using shredded cheese instead of regular cheese.


This process is so easy and it's simple to adapt to the ingredients in your kitchen or dorm.

Step 1. Cook an egg! Over easy is your best bet. I haven't done a post on these yet, but they're super easy and I promise you can figure it out!


Step 2. While you're waiting on your egg, pop your bagel into the toaster and toast it to your preferred level of toastiness.


Step 3. Assemble your sandwich with the bagel and egg. Then add cheese and salt & pepper to taste.


*If you wanted to get really wild, you could probably butter your bagel as well.



There you have it! A fun, easy breakfast sandwich that is eggstremely delicious!
