Egg-ternational

In my travels I've eaten a lot of eggs in a lot of different places. But my very favorite eggs were in China. When I saw a steaming plate of what appeared to be scrambled eggs and cucumbers coming towards me I couldn't believe my eyes. Eggs? and ....CUCUMBERS? I couldn't imagine anything more disgusting except maybe eggs and dish soap.

Nevertheless, I ate what was placed before me, and to my surprise it was delicious. That's the thing about going new places and trying new things. As Disney's Pocahontas says, "you'll learn all the things you never knew you never knew." I never knew that it was common to combine cucumbers and eggs. But now I do. And I'm better for it.


Today, I decided to make eggs and cucumbers for myself. This recipe is beautifully simple. You need:


1) 3 Eggs

2) 1 Cucumber

I really encourage you all to try this simple dish, but more than that, I encourage you all to stay to open to new things and new experiences. Travel the world! Eat an egg and vegetable pairing you would have never thought of! Whatever it is that scares you, get out there and try it!
