This post is inspired by my dear friend, Claire Smith, a biology major at North Greenville University, a fellow egg-lover, and eggs-pert. As I began to explain the purpose of my blog, not only was she incredibly supportive, she also began to share her own research on egg pigmentation and maculation.
This is a little different from my normal egg recipe post, but I think that this information on eggs is really fascinating and worthwhile knowledge for even a casual egg lover. The paper uses a lot of scientific language to describe the process and the "why" behind various eggs pigmentation and maculation.
I am attaching Claire's research paper and I encourage you all to take a read and let me know what you glean from this reading!! There is so much more to eggs than immediately meets the eye.
