Growing up, I never had the breakfast foods that the other kids had. I never had the Pop-Tarts and Lucky Charms or Eggo waffles. My mom insisted that my siblings and I eat square meals and that especially breakfast, the most important meal of the day, be full of protein. At the time, I resented our healthy breakfasts, but now, I have come to see the that she was so right.
Starting the day off with an egg or two is a great, healthy way to start the day! The best thing about eggs, are the many different ways that they can be prepared. They can be boiled, fried, over-easy, sunny-side-up, poached, scrambled, coddled, or made into a casserole, omelette, or quiche. I can't imagine another chicken byproduct matching the versatility of the common egg.
